INGREDIENTS:
- 1 1/2 ounces Dillon’s Gin – Dry Gin 7 or Unfiltered Gin 22
- 3/4 ounce fresh lemon juice
- 1 ounce lavender blueberry simple syrup*
- 3 ounces soda water
- Fresh blueberries, for garnish
- Fresh lavender, for garnish
LAVENDER BLUEBERRY SIMPLE SYRUP
- 1 cup water
- 1 cup sugar
- 3/4 cup fresh blueberries
- 2 lavender sprigs, flowers removed
COCKTAIL PREPARATION:
1. Make the syrup. Combine all the ingredients into a small pot and bring up to a light boil. Allow the sugar to dissolve and blueberries to burst. Remove from heat and let it cool, pressing the blueberries to extract all the juice. Once cooled, strain into an airtight container and refrigerate until ready to use.
2. Make the cocktail. In your cocktail shaker, add the gin, lemon juice, syrup and ice. Shake for 10-15 seconds.
3. Strain into an ice filled glass, top with soda water and garnish.
